Wafer par Eeda

out_1542981062331Wafer par Eeda ( Eggs on potato chips ) is the traditional parsi egg dish. This recipe is very unique & flexible. You can add absolutely any kind of chips – plain or flavoured. whisk your eggs and add to make the omlette. Parsis add some ginger garlic to these omlette too. These chips in eggs are so good. The crispy crunch of the chips popping out of the seasoned & comforting eggs. You will keep making them forever & often.

Ingredients : 

2 Eggs

3 Handfull potato chips

1 small onion finely chopped

1 Green chilli finely chopped

1/2 inch ginger grated

2 Cloves garlic grated

1 Spoon oil

1 Cube cheese

Salt to taste

1 spoon coriander finely chopped

Recipe of wafer par eedu : Heat oil in a pan on medium flame. Add onions and saute for 30 seconds. Now add ginger, garlic and chilli fry them for another 15 seconds. Add chips and crush them slightly. Now whisk eggs in a bowl and salt. Mix well. Pour them over chips as evenly as possible. Swirl the pan once slightly, to let the runny eggs spread through the chips. Cook on medium low flame for 2 minutes. Turn off the gas and transfer it on a serving plate. Garnish with chopped coriander & grated cheese. Serve hot.
